Chef, as we pass the three week point, I think we need to aim for video at some point. We gotta see the technique and where these tubes are coming from.
Extremely good effort today, but you have some wide pieces clearly from the large end of the chives, which feels crazy, because that’s where your cuts should start, and where everything should be easiest to get uniformity, as you have the product lined up, a clean board, and plenty for your off-hand to grip/steady. I gotta know where things are going wrong.
